Chocolate Revel Bars {aka Michelle Cookies}

I made these cookie bars today for the first time in a sweet forever and realized I had never shared this recipe. Growing up we called them "Michelle Cookies" because my sisters good friend Michelle LOVED them.  They are super yummy and pretty easy to throw together- you might even have the ingredients in your pantry right now!


3 cups oatmeal
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
2 cups packed brown sugar
2 eggs
4 teaspoons vanilla extract
1 (14 ounce) can sweetened condensed milk
1 1/2 cups semisweet chocolate chips
2 tablespoons butter
1/2 teaspoon salt

  1. Preheat oven to 350 degrees. Lightly grease a 9x13 inch baking pan.
  2. In a large bowl, beat together 1 cup butter and brown sugar until fluffy. Mix in eggs and 2 teaspoons vanilla. In another bowl, combine oats, flour, baking soda, and 1 teaspoon salt; stir into butter mixture. Set aside.
  3. In a medium saucepan, heat sweetened condensed milk, chocolate chips, 2 tablespoons butter, and 1/2 teaspoon salt over low heat, stirring until smooth. Remove from heat. Stir in 2 teaspoons vanilla.
  4. Pat 2/3 of the oat mixture into the bottom of the prepared pan. Spread chocolate mixture evenly over the top, and dot with remaining oat mixture.  {I usually wet my hands and pat out the other part of the mixture to cover the chocolate mixture}
  5. Bake for 30 to 35 minutes in preheated oven. Let cool on a wire rack, then cut into bars.

Peanut Butter Bars {just like Reese's PB cups}


  • These are super yummy, super easy, and truly taste just like a Reese's Peanut Butter cup! {Seriously they do!}


  • 1 cup butter or margarine, melted (I used 1 1/2 cup the second time I made these and it was just fine!)
  • 2 cups graham cracker crumbs
  • 2 cups confectioners' sugar
  • 1 cup peanut butter
  • 1 1/2 cups milk chocolate chips
  • 4 tablespoons peanut butter

  • In a medium bowl, mix together the butter or margarine, graham cracker crumbs, confectioners' sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of a 9x13 inch pan and refrigerate for 2 hours.  In the microwave, melt the chocolate chips with the peanut butter, stirring occasionally until smooth. Spread over the prepared crust. Refrigerate for at least one hour before cutting into squares.

Smores Bars

If you love smores but hate the mess, this recipe is for you! Very easy and very yummy!

1 package Betty Crocker sugar cookie mix
1 cup graham cracker crumbs
1 cup butter, melted
2 large Hershey's chocolate bars, broken into small rectangles
4 1/2 cups miniature marshmallows

Preheat oven to 375 degrees. Spray 9 x 13 inch pan with cooking spray. In large bowl mix together cookie mix, graham cracker crumbs and melted butter. Spread into prepared pan. Bake for 18-20 minutes. Turn oven OFF. Immediately after removing from oven place Hershey bar pieces all over crust. Set in oven for 2 minutes. Remove and use a knife to spread the chocolate evenly over the crust. Sprinkle marshmallows over chocolate- covering completely. Turn oven on to broil. Place pan in oven and watch carefully- removing bars as soon as marshmallows start to brown. Best served warm!

Pumpkin Pie Snickerdoodle Bars

This is a great recipe that is a combination between a cookie and a pie. It's a nice fall treat that isn't too sweet and makes your house smell like fall!


Snickerdoodle Layer
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 cups packed brown sugar
1 cup butter, at room temperature
2 eggs, at room temperature
1 tablespoon vanilla extract

Pumpkin Pie Layer
1 cup all-purpose flour
1 cup white sugar
1 stick butter, at room temperature
1 teaspoons baking powder
1 teaspoons salt
1 teaspoon pumpkin pie spice
2 eggs, at room temperature
1 1/2 cups canned pumpkin

2 tablespoons white sugar
2 teaspoons cinnamon

1 oz white chocolate, chopped
1/4 teaspoon pumpkin pie spice

Preheat oven to 350 degrees. Lightly grease a 9x13 inch pan and lay a piece of parchment (or wax paper or foil) paper across the pan, so that it extends beyond the pan (the paper is an optional step, but it will make it easier to get the bars out later).

To make Snickerdoodle layer:
Sift together flour, baking powder and salt and set aside. In large bowl, beat together butter, sugar, egg and vanilla until smooth.Stir in the flour mixture until well blended. Spread evenly in prepared pan.

To make Pumpkin layer:
In a mixer bowl, mix together all ingredients until well combined. This layer will be less thick and more pourable. Pour over the snickerdoodle layer, smoothing out the top.

Combine white sugar and cinnamon in a little bowl. Evenly sprinkle cinnamon sugar mixture over the top of the batter.

Bake for 33-40 minutes or until a toothpick inserted into the center of the pan comes out clean. Let the bars cool completely. They will deflate a bit and remain a bit pie-like on the top layer. The bars that are closer to the edges of the pan will be more firm, but are still equally as good.

After the bars are completely cool, place the chopped white chocolate into a bowl or zip-lock bag
and melt on low power. When it's completely melted, add the pumpkin pie spice and mix. Use a spoon or cut a small corner off the bag and drizzle the melted chocolate over the top of the bars and let it cool and harden.

Use the parchment paper to lift the bars out of the pan. Place on a cutting board and cut into bars.

Maple Oatmeal Bars

Maddie absolutely loves oatmeal cookies. LOVES them! So I decided to make some quick oatmeal bars with a little added twist.


2 packages Betty Crocker oatmeal cookie mix

1 1/2 sticks butter or margarine

2/3 cup brown sugar

2 T maple syrup

2 eggs

1/3 cup water

1 cup powdered sugar

1 t maple flavoring

milk

Preheat oven to 350 degrees. In mixing bowl cream butter and brown sugar together till creamy. Add in cookie mix, syrup, eggs, and water. Mix till well blended. Spray 9 x 13 inch pan with cooking spray. Spread dough in pan- using wet hands to pat down if necessary. Bake for 40-45 minutes or until center is set. Cool for 20 minutes.

In small bowl mix together powdered sugar and flavoring. Add milk till of drizzling consistency. Drizzle over cooled bars. Cut into squares.

Almond Joy Brownies

This is another easy way to jazz up a boxed brownie mix! These are both yummy and easy!

1 (19 7/8 ounce) box Duncan Hines chewy fudge brownie mix

3 tablespoons vegetable oil

1 cup Eagle Brand Condensed Milk

1 (14 ounce) package miniature Almond Joy bars, coarsely chopped

1/2 cup toasted almonds (optional)

Preheat oven to 350 degrees. Prepare mix according to brownie package directions, except only use 3 tablespoons of vegetable oil. Pour into a greased 9 x 13 inch pan. Pour and spread 1 cup of condensed milk on top of brownie mix. Sprinkle with chopped candy bars and toasted almonds. Bake at 350 for 35-38 minutes. Let cool completely before cutting into 2 dozen bars. Enjoy!

Peanut Butter Fudgy Bars

This is another easy school treat I made this week. These are another bar with a great combination of peanut butter and chocolate that only use a few simple ingredients.


1 butter recipe cake mix
1 cup peanut butter
1/3 cup water
1 egg
1 can chocolate fudge frosting
1/2 cup peanut butter
1/2 chopped peanuts

Heat oven to 350 degrees. Spray 9 x 13 inch pan with cooking spray. In large bowl, combine cake mix, 1 cup peanut butter, water and egg on low speed. Mix 2 minutes on medium speed. Mixture will be sticky. Wet your hands and use them to spread dough into prepared pan. Bake for 20-25 minutes or until puffed and light golden brown. Cool completely. In small bowl, blend frosting with 1/2 peanut butter and spread over cooled bars. Top with chopped peanuts.

Snicker Brownies

I made these on Sunday as treats for the staff at my school on the first day. So many people wanted the recipe that I'm posting it here, but it's so easy that I am truly embarrassed to even call it a recipe. When I say it's easy, I mean EASY.


1 family size box brownie mix with frosting (I used the Betty Crocker Supreme Frosted Brownie mix)

10 small Snickers (not mini) candy bars, sliced into thin slices

1 can vanilla frosting

10 small Snicker (not mini) candy bars, diced


Spray 9 x 13 inch pan with cooking spray. Prepare brownie mix as directed on box. Spread half of brownie batter in pan to cover bottom. Carefully place sliced snickers on top of brownie batter- one at a time- so the entire pan of dough is covered. Carefully spread remaining brownie batter on top of Snicker layer. Bake for 30-35 minutes or until done. Cool completely. In large bowl, mix brownie frosting, vanilla frosting, and diced Snicker bars till well blended. Spread over cool brownies.


Of course in this recipe you can use any other type of candy bar that you like or that is on sale. And I'll be honest, when I was throwing this recipe together, I only intended to use the frosting that came with the brownies- but once I added the Snicker pieces, it was way too thick to spread. So I added a can of white frosting- because that is what I had on hand. I would have grabbed chocolate, had I had some in the pantry. But I honestly think it was better not using all chocolate because it made the frosting yummy and lighter with only a hint of chocolate.

Cookies and Cream Peanut Butter Brownies

When I saw this recipe, I knew I had to make these brownies for my sweet husband who loves all three main ingredients........chocolate, Oreo cookies, and peanut butter. I altered the recipe a bit as it called for using regular Oreo cookies- but I substituted peanut butter Oreo cookies instead. Although I didn't taste them, they did smell yummy while they were baking and Tony said they were very rich and delicious!

1 box Brownie Mix (9x13 size)


8 oz package cream cheese, softened


1/3 cup sugar


2 T creamy peanut butter


10 peanut butter Oreo cookies, broken into pieces (I used the Kroger brand b/c they were cheaper)


2 cups semi sweet chocolate chips


3 T creamy peanut butter


3 T half and half (I was out of half and half and simply left this ingredient out and the ganache came out just fine)


Preheat oven to 350 degrees. Prepare brownie mix according to package directions (or use your favorite homemade brownie recipe) and place into a 9 x 13 inch pan lined with foil that has been sprayed with Pam. In a medium bowl, mix together the cream cheese, sugar, and 2 T peanut butter until smooth. Stir in cookie pieces until combined. Using a spoon, spoon cookies and cream mixture evenly over brownie mix. Using a knife, gently swirl cookies and cream into brownies without scraping the bottom of the dish. Bake for 35-40 minutes or until toothpick comes out clean from center. Cool completely. Place chocolate chips into a microwave safe bowl and microwave for about 1 minute. Stir in remaining peanut butter and stir chocolate chips until smooth. Place back in the microwave for 15-30 more seconds if not smooth. Stir in half and half until glossy smooth, then spread over cooled brownies. Cut into squares and serve.


TIP OF THE DAY: If you are not a peanut butter fan, you can simply use regular Oreo cookies and omit the peanut butter to make Cookies and Cream Brownies.

Edited to ADD: Here are just two comments from my sweet co-workers about these brownies: "These are the BEST brownies I have EVER eaten!", "Those brownies deserve a high 5 they are so good!". And a tip for anyone who lives here in CS and shops at Kroger- I found the PB Oreo's at Kroger on RP on a manager special for only $1.09!

Caramel Walnut Bars

2 cups flour
¾ cup firmly packed light brown sugar
1 egg, beaten
¾ cup margarine or butter
¾ cup chopped walnuts
24 caramels
1 (14 ounce) can Eagle Brand Sweetened Condensed Milk

Preheat oven to 350 degrees. In large bowl, combine flour, sugar and egg; cut in ½ cup of margarine or butter until crumbly. Stir in walnuts. Reserving 2 cups crumb mixture, press remainder firmly on bottom of greased 13 x 9 inch baking pan. Bake 15 minutes. Meanwhile in heavy saucepan over low heat melt caramels with sweetened condensed milk and remaining ¼ cup margarine or butter. Pour over prepared crust. Top with reserved crumb mixture. Bake 20 minutes or until bubbly. Cool. Cut into bars.

Peanut Brittle Oatmeal Bars

Tony loves peanut brittle so when I saw this recipe, I knew I simply had to make it for him. I had high hopes for it and was NOT disappointed at ALL. What a great use for any peanut brittle you have lying around!

3/4 cup butter, softened
1 1/4 cups peanut butter
1 cup sugar
1/2 cup brown sugar, packed
1 t baking powder
1/2 t baking soda
2 eggs
1 t vanilla
1 1/4 cups flour
2 cups regular or quick cooking oats
1 1/4 cups crushed peanut brittle
8 ounces white baking chocolate, chopped

Preheat oven to 375 degrees. Line a 15 x 10 x 1 inch baking pan with foil, extending foil over edges of pan; grease foil. Set baking pan aside. Beat butter and 1/2 cup of peanut butter in a large bowl with an electric mixer on medium till well combined. Add sugars, baking powder, and baking soda. Beat until combined, scraping side of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much flour as you can with the mixer. Stir in any remaining flour. Stir in oats and 1/2 cup of peanut brittle. Press dough on bottom of the prepared pan. Bake for 15 minutes. Center will not appear set; bars sink as they cool. Cool completely in pan on wire rack. Heat and stir white baking chocolate and remaining 3/4 cup peanut butter in a small saucepan over low heat until mixture is melted and smooth. Spread evenly over cooled mixture in pan. Sprinkle with remaining peanut brittle. Chill bars for about 30 minutes or until chocolate mixture is nearly set. Use foil to lift baked mixture from pan. Cut into bars. Store in refrigerator.

Gingerbread Pumpkin Bars

These bars are wonderful warm. It's like having a warm gingerbread cookie with pumpkin pie on top. YUMMY!

Bars:
2 1/4 cups all-purpose flour
1 1/2 t baking soda
1/2 t salt
1/2 t cinnamon
1/4 t ground ginger
1/4 t nutmeg
1/8 t ground cloves
2 sticks butter or margarine, softened
1 1/2 cups granulated sugar
1/4 cup molasses
1/3 cup rolled quick oats

Filling:
6 ounces cream cheese, softened
1 small can mashed pumpkin (not pie filling)
1/2 cup sugar
1 t vanilla
1/2 t cinnamon
1/4 t ground ginger
1/4 t nutmeg
1/8 t ground cloves
2 large eggs

Glaze:
1 cup powdered sugar
1 T butter or margarine, softened
1/4 t vanilla1 to 2 T milk

Bars:
Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, ginger, nutmeg and cloves.In a large mixing bowl, beat together butter, sugar and molasses until creamy. Add dry ingredients and mix just until combined. Reserve 3/4 cup of this mixture and place in a small bowl. Scoop the remaining mixture into a 9 x 13 inch baking pan lightly coated with cooking spray.Add the oats to the reserved mixture and mix until combined - set aside.

Filling:
In a large mixing bowl, beat cream cheese until smooth. Add pumpkin, sugar, vanilla, cinnamon, ginger, nutmeg and cloves - mix until well combined. Add the eggs, one at a time, mixing just until combined. Scoop the mixture over the uncooked base and evenly spread the mixture over the top. Crumble reserved oat mixture over filling.Bake until the topping is a golden brown, about 25-30 minutes. Remove and place on a wire rack to cool completely.

Glaze:
In a small bowl, mix together powdered sugar, butter and vanilla. Mix in just enough milk until the mixture will easily flow from a spoon - drizzle over cooled bars.

Caramel Apple Cheesecake Bars

This is another great fall recipe that includes apples!

Bars:
2 cups all purpose flour
1/2 cup firmly packed brown sugar
1 cup butter or margarine, softened
2 (8 ounce) packages cream cheese, softened
1/2 cup plus 2 T sugar
2 large eggs
1 t vanilla
3 apples, peeled, cored, and finely diced
1/2 t cinnamon
1/4 t ground nutmeg

Streusel Topping:
1 cup firmly packed brown sugar
1 cup all purpose flour
1/2 cup quick cooking oats
1/2 cup butter or margarine, softened

Preheat oven to 350 degrees. In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender (or a fork) until the mixture is crumbly. Press evenly into a 9 x 13 inch pan lined with foil. Bake 15 minutes. In large mixing bowl, beat cream cheese until smooth. Beat in 1/2 cup sugar, eggs, and vanilla till smooth. Pour over warm crust. In a small bowl, stir together apples, 2 T sugar, cinnamon and nutmeg. Spoon evenly over cream cheese mixture. In small bowl stir together all streusel ingredients and mix just till crumbly. Sprinkle evenly over apple layer. Bake 30 minutes. Drizzle with caramel topping.

Cinnamon Almond Bars

One of my favorite things about fall is the ability to find my favorite type of chip- Hershey's CINNAMON chips- in the grocery store. I buy lots of them because they are so yummy in oatmeal cookies. I decided to try something new the other night and came up with this bar recipe. Not only do they taste great- they smell fabulous while they are cooking!


1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls
1 cup white vanilla baking chips
1 cup cinnamon chips
1 cup slivered almonds
1 can (14 oz) sweetened condensed milk (not evaporated)

Preheat oven to 350 degrees. Spray 9 x 13 inch pan with cooking spray. Unroll dough into 2 long rectangles. Place in pan; press over bottom and 1/2 inch up sides to form crust.
Bake 5 minutes. Sprinkle chips and nuts evenly over crust. Pour sweetened condensed milk evenly over top. Bake 20 to 25 minutes longer or until golden brown. Cool 10 minutes. Run knife around sides of pan to loosen. Cool 1 hour. Refrigerate 30 minutes or until chocolate is set before cutting into bars.



TIP OF THE DAY: To change up these bars, change the cinnamon chips to chocolate and the almonds to walnuts.

Maple Butter Blondies

My daughter Madison had the famous Applebee's Blondie the other night when we were out to dinner with my sweet mother in law. She doesn't like chocolate at all so it's exciting when she finds a dessert she really likes. I decided I would try to recreate it at home for her and this was my first attempt. The blondie is VERY rich- but of course once you add vanilla ice cream and maple sauce- it is a SUPER sweet treat! Madison loved them- the only change we will make next time is to omit the white chocolate chips in the blondies because she said they made it just a tiny bit TOO sweet!
Blondies:
1 cup margarine or butter
1 1/2 cups brown sugar, packed
2 eggs
1 t vanilla extract
1/2 t maple flavoring
1 1/2 cups flour
1 t baking powder
1/2 t salt
1 cup loosely chopped walnuts
1 cup white chocolate chunks or chips

Maple Butter Sauce:
1 1/3 cups sugar
1 cup whipping cream
2/3 cup butter
2 t maple flavoring

Blondies:
Preheat oven to 350 degrees. In large bowl mix flour, salt, and baking powder. Set aside. In mixer blend butter and brown sugar. Add in eggs one at a time and then add vanilla and maple flavoring. Gradually add in flour mixture till well combined. Stir in chips and nuts. Grease a 9 x 13 pan with cooking spray. Smooth blondie mixture in pan with a spatula. Batter will be thick and sticky. Bake for 2-25 minutes. The top of the blondies should be shiny and firm when you touch the center with your finger. Do NOT over bake or they will be dry.

Maple Butter Sauce:
Combine sugar, whipping cream, and butter in small saucepan. Bring to a boil. Cook for 2-3 minutes, stirring constantly. Remove from heat and add flavoring.

Place one blondie on plate and top with vanilla ice cream. Drizzle with sauce and sprinkle with a few walnut pieces.

TIP OF THE DAY: When trying to spread sticky and thick batter either wet hands or spray hands with cooking spray before pressing batter into pan. Once you have pressed batter in pan, then smooth over it using a spatula to get rid of any finger prints.

Peanut Butter Banana Bars

This is another easy recipe to use when you have bananas that are going bad and you aren't in the mood for banana bread or banana cake. Just a few quick ingredients and you have a moist snack bar! Please note- these are NOT super sweet- but still yummy.



3/4 cup butter or margarine, softened
1 cup brown sugar, packed
1 egg
1/2 t salt
1 t vanilla
1 cup bananas, mashed
4 cups uncooked rolled oats
1/2 cup peanut butter

Preheat oven to 350 degrees. In a large bowl, beat butter and brown sugar until light and fluffy. Beat in egg, salt, vanilla, bananas and peanut butter. Stir in the rolled oats. Mix well. Spread into a greased 9 x 13 inch pan. Bake for 1 hour or until a tooth pick inserted in the center comes out clean. Cool and cut into bars.

Apple Brownies with Buttery Cinnamon Frosting

My mom used to make these and they always remind me of fall. The recipe below only makes a 9 x 9 pan but I always double it and make a 9 x 13 inch pan and 4-6 muffins. (You will have to increase the baking time as well) The frosting is VERY rich so I do NOT double it.

Brownies:
2/3 cup butter, softened
1 cup sugar
1 cup light brown sugar
2 eggs
1 t vanilla
1 1/2 cup all purpose flour
2 t baking powder
1/4 t salt

1 cup finely chopped apples
1/2 cup chopped nuts (I use walnuts)

Frosting:
1 stick butter, softened
1 T cinnamon
1 box powdered sugar
1 T vanilla
Milk

For brownies:
Preheat oven to 350 degrees. Cream together sugars and butter; add eggs and vanilla. In large mixing bowl mix together flour, baking powder, and salt. Add to sugar mixture and mix well. With wooden spoon (called the spanking spoon in our house) stir in apples and nuts. Spread in greased 9 x 9 inch pan. Bake for 35-40 minutes. Frost with Buttery Cinnamon Frosting.

For frosting:
Cream butter. Add cinnamon and powdered sugar. Add vanilla and enough milk to reach spreading consistency. Spread over warm apple brownies.

TIP OF THE DAY: Instead of chopping up nuts in a mini chopper or food processor, simply place them in a ziploc baggie (not fully sealed) and beat with a meat mallet or rolling pin. If I am using a whole package of nuts, I simply do this while they are still in their original bag.
